flattened crispy red potatoes

Such an easy comfort food! This recipe is very basic and easy to experiment many variations on.

Ingredients:
-small red potatoes
-olive oil
-sea salt
Optional:
-garlic or green onions

Step 1:
Boil potatoes in water till fork tender. This took less than 30 min. for me. Now preheat oven to 450 degrees.


Step 2:
After potatoes are tender, take them out, dry them off and let them cool. Lay two dish towels on the counter, one on top of the other. One by one, place a potato between the towels and press down. Flatten each potato to about half an inch thick.


Step 3: Spread olive oil over a baking sheet. In a small bowl, mix olive oil and whatever flavoring you wish to put on the potatoes. For example, I mixed in garlic.



Step 4: Place flattened potatoes on baking sheet. With a brush, cover each potato in olive oil mix and sprinkle with salt.


Step 5: Place baking sheet in oven. Depending on how soft/crispy you want them, bake time can take anywhere from 15-30min.


Voila!
I ate them with ketchup but you can get as gourmet as you like!
